Health and Safety: Food and Hygiene Safety

The Food Safety Act 1990 outlines the laws with regards to activities throughout the food distribution chain, from primary production through distribution to retail and catering. Food Hygiene legislation requires all food handlers to receive appropriate supervision, and be instructed and/or trained in food hygiene, to enable them to handle food safely.

Anyone handling food and drink within the catering sector must be trained in Food Safety and Hygiene and apply it to their work. In order to ensure that your workplace is in compliance with the main general food law requirements, including the provisions on food safety, you must keep up-to-date with legislation.

Being familiar with the handling, preparation, and storage of food in ways that prevent food-borne illness will allow your workplace to operate legally, and help your understanding of the number of routines that should be followed to avoid potentially severe health hazards. Food safety courses will ensure you are aware of the latest requirements and have the skills for working in this field.

Food and Hygiene Safety Awarding bodies

  • The Chartered Institute of Environmental Health (CIEH): As the UK’s leading awarding body for vocational qualifications in accredited food safety, health and safety and environmental protection qualifications, the CIEH accredits courses in a wide range of different food safety training areas.
  • The Royal Institute of Public Health (RIPH): Food Safety courses are developed, to create a food hygiene syllabus that is recognised by Environmental Health Officers.

Food safety courses are generally delivered at a variety of levels and tailored to all sectors including Induction, Awareness, Refresher and Foundation Training. Courses are suitable for delegates working in contact with food, or the management of people in catering; and appropriately train delegates that work in food safety.
